Creamy roasted vegetables and rice

Omar is getting his first tooth!! :) I can feel it poking through the gums! :) He was awake so much last night I hardly got any sleep, so for dinner we made one of our staples so that I didn't have to think too much...

1. Cut up a head of cauliflower and an equal amount of brussels sprouts (cut these in half); toss with olive oil and salt; spread in a cookie sheet and bake for 20-25 min at 450 degrees. (at this point I start cooking the rice, too - just according to the package instructions)
2. Melt butter and olive oil together in a pan and sautee sliced mushrooms until browned; transfer to a bowl.
3. In the same pan, melt more butter/olive oil and sautee one large sliced shallot (or small onion, if you want to be less 'gourmet') until soft and browned. Add 1/4-1/2 c dry white wine (Sauvignon Blanc, etc) and cook until volume is reduced by about half. Add mushrooms back to the pan with 1 c heavy cream. Salt and pepper to taste.
4. Add roasted vegetables to creamy mushroom mixture and stir several times to coat them. Serve creamy veggies over rice and enjoy!

I like this recipe because it is a very hearty vegetarian meal and it made me love brussels sprouts (they are so high in protein and fiber). You can also serve over couscous or other grain, or mix the grains with rice for added texture.

Spaghetti Squash Salad

Ok, this a new favorite!
Cut a spaghetti Squash in half, clean out the inside (kinda like you would a pumpkin). Season with whatever seasonings you like, we use a garlic and herb seasoning. Get a casserole dish or whatever you can find and fill up to about an inch of water, and place squash face down, cover with a wet paper towel and microwave on high for 10 minutes or till the outer shell becomes soft when you poke it. Scrape the inside of squash out into a large bowl and add seasonings to taste. OR you can turn it into a salad by adding cubes of mozzarella, halved cherry tomatoes and Italian dressing.

So, it's a gloomy day. We made comforting chicken noodle soup and ate it in front of the fireplace. Then we topped it off with this recipe for apple cobbler from the food network. I didn't have any dried cranberries so we threw in a few frozen cherries and swapped the almonds for pecans. I would definitely make it again:)

Spicy Hot Chocolate

Ok, I realize this first post is actually a dessert, but it was SO tasty...

2 cups milk
1 3.5 oz bar of Lindt Excellence Chili Dark Chocolate (thanks, Mom and Dad!)
1 tsp vanilla
1/4 tsp cinnamon
1/2 tbsp sugar
1/2 cup water

Whisk over low heat on the stove until chocolate is melted, but mixture is not yet boiling.
Pour into two big mugs and enjoy with your sweet and spicy spouse.
